AHHHHHHH WE RAN OUT OF TIRAMISU RECIPE


Syrup

  • 150G Espresso
  • 25ML Amaretto
  • 25G Sugar

Mascarpone Cream

  • 250G Mascarpone
  • 25G Marsala or similar
  • 2 Large Egg Yolks

Sugar Syrup

  • 25G Golden Sugar
  • 12.5G Cold Water
  • 2 Large Whites

Hot Sugar Syrup

  • 60G Golden Caster Sugar
  • 30G Cold Water
  • 125G Double Cream

To Finish

  • 30G Chocolate

Instructions

  1. Combine the espresso, sugar, and Amaretto
  2. Make the Sugar syrup which is 25G Golden Sugar and 12.5G Cold Water, boil it and let cool.
  3. To make the Mousse, add in a large bowl two egg yolks, and add the sugar syrup and whisk it until you have a thick and creamy Sabayon.
  4. In a separate bowl add the Mascarpone, loosen it up with Marsala and add in the Sabayon fold it through
  5. For the Meringue add the whites to a bowl and whisk the egg whites with the Hot Sugar Syrup which is 60G of Golden Sugar and 30G of Cold Water and whisk it up and add in thirds the mixture you have already
  6. Separate bowl add the cream and some icing sugar and whisk it up until thick and fold it through so now you have one bowl
  7. To Build add a layer of lady fingers and half of the coffee on that layer or two depending on the thickness of the fingers
  8. Add a layer of mousse and then another layer of fingers add the rest of the coffee on top, add the final layer of mousse and top it with dark chocolate on top
